Preheat oven to 350. In one of your larger bowls, mix together the flour, baking powder, and salt. Add the sweetener, extract, lemon zest, oil/Earth Balance, and egg replacer, and stir gently until everything is mixed (be careful not to over stir—just a gentle mixing.)

Pour into a lightly oiled and floured cake pan (bundt is nice, or an 8x 10”). Bake for 25-30 minutes, but be sure to check with a toothpick or knife to see if done.

For a healthier cake, go icing-free, but if you must, cream some margarine (no more than ¼ cup), a tablespoon or less of dry sweetener, a tsp of lemon juice, and some lemon zest.
