Preheat oven to 375 degrees.
Over medium heat, toast the nuts of your choice in a dry skillet for 3-5 minutes, or until you begin to smell a yummy nutty aroma. Let them cool, then grind them until crumbly, or almost powder-ish, and place them into a mixing bowl. Combine egg replacer and water in a food processor and blend until fluffy. Next add the applesauce, dates, syrup and almond extract, and blend it all up very well.
Add dry ingredients to your ground nuts and mix. Add the wet ingredients to the dry and stir until well combined. Pour batter into your favorite (non-stick or lightly oiled) cake pan (rectangular, bundt, round, etc.) and bake for 30-35 minutes, until knife/toothpick comes out clean.

2 tablespoons cocoa powder
2 tablespoons maple syrup
